Chilli Chicken



Ingredients:


250 grams boneless chicken, roughly chopped

1-2 green chillies, finely chopped

1-2 green chillies, slit 

Salt to taste

Crushed black peppercorns to taste

1 egg

2 tablespoons cornflour

1½ tablespoons refined flour (maida)

2 tablespoons oil + for deep-frying

4-5 garlic cloves, finely chopped

1 medium onion, roughly diced

1 medium green capsicum, roughly diced

¼ cup chicken stock

1 tablespoon soy sauce

½ tablespoon sweet chilli sauce

1 teaspoon vinegar

Spring onion greens for garnishing


Method:


1. Put chicken in a bowl. Add salt, crushed peppercorns, egg, 1 tablespoon cornflour and refined flour and mix. 

2. Heat sufficient oil in a kadai. Deep-fry the chicken pieces till crisp. Drain on absorbent paper. 

3. To make the sauce, heat 2 tablespoons of oil in a non-stick pan. Add garlic and sauté for a few seconds. 

4. Add chopped green chillies, slit green chillies, onion, capsicum and salt, toss well and cook for 2-3 minutes. 

5. Add stock, soy sauce, fried chicken pieces, mix well and bring to a boil. 

6. Mix together remaining cornflour and remaining stock in a bowl to make slurry. Add this to the sauce, mix and cook till the sauce thickens. 

7. Add chilli sauce and vinegar and mix well. 

8. Garnish with spring onion greens and serve immediately.
