Ingredients:
3 cups cooked Basmati rice
1 tablespoon oil
1 tablespoon chopped garlic
1 medium carrot, chopped
7-8 French beans, chopped
8-10 button mushrooms, cut into quarters
2-3 spring onion bulbs, diagonally sliced
½ medium green capsicum, chopped
Salt to taste
White pepper powder to taste
2 teaspoons soy sauce
3 tablespoons diagonally sliced spring onion greens + for garnishing
1 teaspoon vinegar
Method:
1. Heat oil in a deep non-stick pan. Add garlic and sauté for 30 seconds. Add carrot and sauté for 1 minute.
2. Add French beans and sauté for 1 minute. Add button mushrooms and sauté for 1 minute. Add spring onion bulbs and sauté for 30 seconds.
3. Add green capsicum and sauté for 30 seconds. Add salt and white pepper powder and mix well.
4. Add rice and mix. Add soy sauce and mix. Add 3 tablespoons spring onion greens and mix. Add vinegar and toss well.
5. Garnish with spring onion greens and serve hot.
